Hi, I'm Kayla—Registered Dietitian, Clinical Nutritionist, lifelong student, and passionate advocate for root-cause healing. My nutrition journey wasn’t linear; it was born from survival, transformation, and a deep need to turn pain into purpose.
"Vollmond" (FOLL-mohnt) means full moon in German. I chose the name to honor both my heritage and the fact that I was born on a full moon. This space was created in 2018 during a major recovery period in my life, and like the moon, I’ve gone through cycles of hiding and revealing. Vulnerability isn’t easy for me, but I share this because healing isn’t surface-level—it’s raw, layered, and deeply human.
In 2013, I was told I had five years to live, dramatic, I know. Born with a rare congenital condition (gastroschisis), I spent most of my life with gastrointestinal complications. At age 20, overwhelmed by loss, grief, untreated depression, poor diet and lifestyle choices, I ended up in the ER with severe intestinal damage. The prognosis was grim.
I was given a list of high-fiber foods, and I threw it away.
Instead, I decided to take control. I eliminated processed foods and adopted a whole-food, plant-based, gluten-free approach that radically transformed how I felt. That was the turning point.
In 2016, after my first abdominal reconstruction surgery, I discovered the field of dietetics and began my formal path into nutrition. I earned my B.S., completed the RD internship, became a Registered and Licensed Dietitian, and subsequently obtained my M.S. in Clinical Nutrition. I am now pursuing board certification as a Clinical Nutrition Specialist (CNS).
Grief, loss, and existential questioning led me to travel to Indonesia and later Peru, immersing myself in cultures and healing practices that broadened my view of what health truly is. I found peace in Eastern traditions, like Tai Chi, Qi Gong, and breathwork, and dove deep into the teachings of Ram Dass, Michael Singer, and Alan Watts.
I also isolated deeply during this time. The COVID-19 pandemic tested me further, but it also solidified my belief: healing requires looking inward. Not just at symptoms, but at stories, systems, and root causes.
You are not just your symptoms. Your eating habits are not random. Your fatigue, your cravings, your resistance—they have origins. My work bridges the physical and emotional, scientific and spiritual. Whether you're dealing with gut issues, hormone imbalances, chronic fatigue, or a general sense of being stuck, my goal is to help you:
Healing is personal—and so is my approach.
This site is a safe space for those looking for more than symptom management. If you're ready to dig deeper, I’d be honored to walk beside you. You don’t have to do it alone. You already have the power within—you just need someone to help you access it.
With kindness and resilience,
Kayla "Vollmond Kays"
