tofu scramble

Vegan, Gluten Free


Yields: 4+ Expect leftovers

Prep time: 10 minutes

Cook time: 15-ish minutes


Ingredients


  • 1 block extra firm tofu; ORGANIC NON GMO 
  • 1/4C chopped onion
  • 1 small bell pepper 
  • 1 clove garlic, minced
  • 2 -4 tsp curry or turmeric powder
  • 1/4 C salsa or 1 small tomato 
  • 1/2C spinach or kale 
  • dash of pepper, cayenne, and salt 


Instructions


  • Heat skillet to medium high


  • Add the onion, bell pepper, and garlic and let simmer for 5 minutes, add olive oil if wanted, I usually omit oil. 


  • During the 5 minutes, press the water out of the Tofu with a Tofu press, or a medium size kitchen towel. It is OK if it starts to crumble, thats the whole point of this recipe. 


  • Add the tofu into the skillet along with the spices, greens, and salsa or tomato. 


  • Cook for roughly 6-10 minutes, or until the water has dried up completely, if too dry, add some veggie broth.

What is Tofu?

Let's just say its like soybean cheese, if that makes sense. 


Tofu is an excellent source of iron and calcium. Including some fibre and zero cholesterol. Tofu is an important source of protein, especially for vegans and vegetarians. 


You can marinate tofu like you would meat or mushrooms. It will taste like whatever you season it with!
